There’s nothing like the taste of fresh, seasonal fruit on a warm, breezy spring day. This kiwi fruit recipe is not only delectable and refreshing, but it is also easy to create.

The unique and decadent combination of ingredients make kiwi salsa delicious as well as nutritious. One of the exotic ingredients is jicama, a vegetable that is similar to a turnip or a large radish and has a nutty flavor and a crisp texture. The taste is best described as a cross between a water chestnut and an apple. It can be eaten raw or cooked but it’s also an excellent addition to salads because it takes on the flavor of the ingredients in a dish, blending nicely with many vegetables and seasonings. In addition, jicama can help boost your immune system because it contains high levels of Vitamin C, iron, and Vitamin B6.

The star of this recipe is the kiwifruit, a green superfood that is found everywhere in local grocery stores year-round.  Kiwis keep your body in good condition thanks to being packed with important minerals such vitamin C, calcium, and iron. The kiwi, originally called the “Chinese gooseberry” and the “sunny peach,” was renamed the kiwi by New Zealand natives after their national bird. There are over 400 varieties of this brown, fuzzy fruit, which grow off of vines much like grapes are produced.

In the U.S, the term “sweet pepper” covers a wide variety of mild peppers, but the best known “sweet peppers” are called bell peppers, named for their bell-like shape. Bell peppers come in a vast selection of colors, from red, yellow, orange, or green all of them have a mild, sweet flavor, and crisp, crunchy flesh. The reason why we are using red bell pepper for kiwi salsa is because they have the strongest sweet flavor out of all the bell peppers. Orange and yellow bell peppers are also on the sweeter side, but they have a lighter taste. The richness of the red bell pepper is needed so that even with the other ingredients, its flavor is not masked.
